The upscaling food industry sees major changes taking place in the beverage segment. Similar to the other sectors, innovation has led to drastic positive variations in the beverage industry as well. Now, new, relishing beverages have titillated millennials and thus, become favourite drinks on the list. A new variety of beverages adds on the list yearly which, in turn, arouses the taste buds and increases the counter sales. For restaurateurs, it is significant to look after the upcoming beverage trends so as to serve the latest beverages and foods to the customers.
IBEF ( Indian Brand Equity Foundation ) report states, “ The Indian food and grocery market is the world’s sixth largest, with retail contributing 70 per cent of the sales. The Indian food processing industry accounts for 32 per cent of the country’s total food market, one of the largest industries in India and is ranked fifth in terms of production, consumption, export and expected growth. It contributes around 8.80 and 8.39 per cent of Gross Value Added (GVA) in Manufacturing and Agriculture respectively, 13 per cent of India’s exports and six per cent of total industrial investment. The Indian gourmet food market is currently valued at US$ 1.3 billion and is growing at a Compound Annual Growth Rate (CAGR) of 20 per cent. India's organic food market is expected to increase by three times by 2020.”

Innovation is greatly embedded in the beverage industry. Thus, essence goes along with the creativity and deeply determines the forthcoming beverage trends. Clinging to the array of prevailing, as well as forthcoming beverage trends, it is essential for the restaurateurs as it helps to scale up their menu cards. The varieties in the beverages are diverse and therefore, it becomes imperative to know all the beverage trends.
1. Protein Beverages
Millennials are health conscious and thus, they look for healthy drinks, especially proteins. In essence, proteins beverages act as a catalyst in escalating muscle energy and athletes fondly consume it. However, non-athletes are also consuming the protein beverages after releasing its health benefits. Owing to the increased consumption of protein beverages, the food manufacturers have innovated new flavours in the protein beverages. Amid the vast protein beverages, alternate protein sources are highly demanding protein beverage type.
So, restaurateurs should utilize this piece of information and accordingly work on their servings menu.

Nootropic is an essential component to improve the brain’s performance as well as health. Primarily, Nootropic encompasses choline, theanine, taurine and iodine. Owing to the increased consumption of the beverage, enormous innovations can be viewed in this food and beverage product. Unlike other energy drinks, Nootropic beverages don’t have any side effects or disadvantages. The consumption of the beverage is safe and correspondingly, boosts the energy. Students and working professionals are main consumers of the protein.

3. Beverages That Are Beneficial For Gut
Since people are highly concerned with digestive health, thus, there are plentiful of digestive beverages available in the market. Fermented beverages, probiotic beverages and prebiotic beverages are some of the popular drinks.
Amid all fermented beverages, Kombucha is the most preferred beverage. No other fermented beverages or probiotic beverages have shown great results as Kombucha beverage has. The drink is enriched with probiotic teas, chia seeds and other flavouring components.
Restaurateurs should add on the above-mentioned beverages in the set menu to increase the sales number.
